After the success of Me Oi restaurant in Strathfield, I decided to create a new concept: quick and affordable Vietnamese food of the utmost quality, flavour and freshness. With executive chef Tony Le, I opened Pho and Go - Vietnamese Street Food in Randwick (Sydney) in June 2017.
Tony is not only my good friend but also a third-generation pho master whose family hails from Ha Noi, the city where pho was born. Their legacy began in the late 1960s, when Tony’s grandfather opened the first pho shop on the now-famous Bát Dàn strip, where it thrives to this day. In the ’90s, Tony’s father wrote the next chapter, starting his own restaurant, the highly regarded Ha Noi Quan in Marrickville, Sydney.
Fast-forward to today, and pho is still what the Le family does best. At Pho and Go, we take no shortcuts, simmering our intensely aromatic broth for 48 hours according to the secret family recipe. While our pho is what keeps people coming back, our noodle salads (bún) and handmade rice-paper rolls are also a massive hit. With our naturally gluten-free menu, vegan-friendly options and exotic fruit smoothies, there’s truly something for everyone.
